Like wine, chocolate holds nuanced flavors depending on where it's grown and how the chocolate-makers process the beans, Discover more about the chocolate lands, the people who grow it and make it, and dangers to chocolate from climate change. You'll sample chocolate from newer bean-to-bar, small batch innovators like Dandelion, Amano and Cru, along with more familiar brands like Guittard and Ghirrardelli. $45 fee.

Do you love birds and chocolate? Begin the day at the Bird Sanctuary. The shoreline should be packed with overwintering shorebirds! The overlook and trail provide close access to identify and observe these birds, along with ducks, pelicans, egrets, and maybe a flyover of a peregrine falcon or kingfisher! Bring a bag lunch to enjoy on the beach if weather permits. At the host house, we’ll discover some of the finest luxury chocolates in the world, many made locally. Taste them and choose your favorites while you learn about rainforest ecosystems, conservation issues, and how our love of chocolate impacts wildlife. $25 per person
